- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 package (16 oz) gnocchi
- 1 cup heavy cream (optional)
- to taste Salt
- to taste Pepper
- for garnish Fresh basil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and chopped sun-dried tomatoes. Sauté for another 2 minutes, stirring frequently.
- Pour in the chicken broth and bring it to a gentle boil.
- Once boiling, add the shredded chicken and gnocchi. Cook according to the gnocchi package instructions, usually about 3-5 minutes.
- If using, stir in the heavy cream and let it simmer for an additional 2-3 minutes to thicken slightly.
- Season with salt and pepper to taste. Serve hot, garnished with fresh basil.
