  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 2 cups corn
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 lime juiced
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • to taste Salt and pepper
  • 1/4 cup crumbled feta cheese
  • for garnish Fresh cilantro

Instructions

  • In a skillet over medium heat, add a drizzle of olive oil. Once hot, add the diced chicken and season with salt, pepper, chili powder, and garlic powder. Cook until golden brown and cooked through, about 7-10 minutes.
  • If using fresh corn, cut the kernels off the cob. In the same skillet, add the corn and cook for 3-5 minutes until it’s slightly charred.
  • In a bowl, mix together the mayonnaise, sour cream, lime juice, and a pinch of salt.
  • Start with a base of cooked rice. Top with the cooked chicken, charred corn, and drizzle with the creamy sauce. Add the crumbled feta and garnish with fresh cilantro.
