  • 1 cup corn (fresh, frozen, or canned)
  • 1/2 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1 each avocado (sliced)
  • 1 each lime (juiced)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 2 cups cooked rice ((or quinoa))
  • optional crumbled feta cheese or cotija cheese (for topping)

Instructions

  • Start by cooking your rice according to the package instructions. You want it fluffy and warm.
  • If you're using fresh corn, grill or sauté it until it's slightly charred. This enhances the flavor!
  • In a large bowl, combine the cooked chicken, corn, red onion, bell pepper, cilantro, lime juice, chili powder, cumin, salt, and pepper. Stir until well mixed.
  • Grab a bowl and layer the rice at the bottom. Spoon the chicken and corn mixture on top.
  • Finish with avocado slices and sprinkle some feta or cotija cheese if you like. A little extra lime juice over the top gives it a nice zing!
