- 1 pound fresh strawberries (hulled and sliced)
- 1/4 cup granulated sugar (for strawberries)
- 1 box (15.25 oz) vanilla cake mix (plus ingredients required on the box)
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar (for whipped cream)
- 1 teaspoon vanilla extract
- Mint leaves (for garnish (optional))
Instructions
- Preheat your oven to 350°F (175°C). Prepare a 9×13 inch baking pan by greasing it.
- In a mixing bowl, combine the cake mix with the ingredients specified on the box. Pour the batter into the prepared baking pan.
- Bake according to the package instructions, usually about 25-30 minutes. A toothpick inserted in the center should come out clean.
- While the cake is baking, mix the sliced strawberries with 1/4 cup of sugar. Let them sit for about 20 minutes to macerate.
- Once the cake is done, allow it to cool completely in the pan.
- In another bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
- When the cake is cooled, cut it into two horizontal layers. Place one layer back in the pan.
- Spread half of the whipped cream over the first layer, then add half of the strawberries on top.
- Place the second layer of cake on top and repeat the process with the remaining whipped cream and strawberries.
- Chill the dessert in the refrigerator for at least 2 hours before serving.
