  • 1 pound fresh strawberries (hulled and sliced)
  • 1/4 cup granulated sugar (for strawberries)
  • 1 box (15.25 oz) vanilla cake mix (plus ingredients required on the box)
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar (for whipped cream)
  • 1 teaspoon vanilla extract
  • Mint leaves (for garnish (optional))

Instructions

  • Preheat your oven to 350°F (175°C). Prepare a 9×13 inch baking pan by greasing it.
  • In a mixing bowl, combine the cake mix with the ingredients specified on the box. Pour the batter into the prepared baking pan.
  • Bake according to the package instructions, usually about 25-30 minutes. A toothpick inserted in the center should come out clean.
  • While the cake is baking, mix the sliced strawberries with 1/4 cup of sugar. Let them sit for about 20 minutes to macerate.
  • Once the cake is done, allow it to cool completely in the pan.
  • In another bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
  • When the cake is cooled, cut it into two horizontal layers. Place one layer back in the pan.
  • Spread half of the whipped cream over the first layer, then add half of the strawberries on top.
  • Place the second layer of cake on top and repeat the process with the remaining whipped cream and strawberries.
  • Chill the dessert in the refrigerator for at least 2 hours before serving.
