  • 2 cups fresh strawberries (hulled and chopped)
  • 1/2 cup sugar (adjust based on the sweetness of the strawberries)
  • 1 cup heavy cream
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup crushed shortbread cookies
  • 1/2 cup whipped cream (for topping)

Instructions

  • In a medium bowl, mix the chopped strawberries with sugar. Let them sit for about 10-15 minutes to release their juices.
  • In another bowl, whisk together the heavy cream, sweetened condensed milk, and vanilla extract until smooth.
  • Gently fold in the strawberries and their juices into the cream mixture.
  • In a baking dish lined with parchment paper, pour half of the ice cream mixture. Sprinkle half of the crushed shortbread cookies over it.
  • Pour the remaining ice cream mixture on top and spread evenly. Top with the remaining crushed cookies.
  • Cover with plastic wrap and freeze for at least 4-6 hours, or until completely firm.
  • Once frozen, slice into bars and serve with a dollop of whipped cream on top if you like.
