- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg (beaten)
- 2 tablespoons butter (melted)
- 1/4 cup cream cheese (softened)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries (sliced)
- 1/4 cup extra strawberries (for topping)
- to taste maple syrup (for serving)
Instructions
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, egg, and melted butter until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a separate bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla, mixing until creamy.
- Heat a non-stick skillet over medium heat; grease lightly.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form, about 2-3 minutes, then add a dollop of cream cheese filling and cover with more batter.
- Flip and cook for another 2-3 minutes until golden brown.
- Serve warm with strawberries and maple syrup.
