  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg (beaten)
  • 2 tablespoons butter (melted)
  • 1/4 cup cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries (sliced)
  • 1/4 cup extra strawberries (for topping)
  • to taste maple syrup (for serving)

Instructions

  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  • In another bowl, mix the milk, egg, and melted butter until combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • In a separate bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla, mixing until creamy.
  • Heat a non-stick skillet over medium heat; grease lightly.
  • Pour 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form, about 2-3 minutes, then add a dollop of cream cheese filling and cover with more batter.
  • Flip and cook for another 2-3 minutes until golden brown.
  • Serve warm with strawberries and maple syrup.
