- 3 ripe bananas (mashed)
- 1 cup fresh strawberries (hulled and chopped)
- 1/3 cup unsalted butter (melted)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 large egg (beaten)
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or cooking spray.
- In a large mixing bowl, combine the mashed bananas and melted butter. Stir until well mixed.
- Add the granulated sugar, brown sugar, and beaten egg to the banana mixture. Mix until everything is combined.
- Stir in the vanilla extract, baking soda, and salt. Mix until smooth.
- Gradually add the flour, mixing just until incorporated. Don’t overmix; a few lumps are okay!
- Fold in the chopped strawberries (and nuts if using) gently with a spatula.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean. The top should be golden brown.
- Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
