  • 3 ripe bananas (mashed)
  • 1 cup fresh strawberries (hulled and chopped)
  • 1/3 cup unsalted butter (melted)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 large egg (beaten)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or cooking spray.
  • In a large mixing bowl, combine the mashed bananas and melted butter. Stir until well mixed.
  • Add the granulated sugar, brown sugar, and beaten egg to the banana mixture. Mix until everything is combined.
  • Stir in the vanilla extract, baking soda, and salt. Mix until smooth.
  • Gradually add the flour, mixing just until incorporated. Don’t overmix; a few lumps are okay!
  • Fold in the chopped strawberries (and nuts if using) gently with a spatula.
  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean. The top should be golden brown.
  • Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
