- 1 lb boneless, skinless chicken thighs or breasts
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 cups cooked rice (white, brown, or cauliflower rice)
- 1 cup steamed broccoli, snap peas, or your favorite veggies
- Sesame seeds and sliced green onions for garnish
Instructions
- Start by marinating the chicken. In a bowl, mix the soy sauce, honey, garlic, ginger, rice vinegar, and sesame oil.
- Add the chicken to the marinade. Let it sit for at least 30 minutes or up to overnight for maximum flavor.
- Heat a large skillet over medium-high heat. Add the marinated chicken, reserving the marinade for later.
- Cook the chicken for about 5-7 minutes on each side, until it’s golden brown and cooked through.
- Pour the reserved marinade into the skillet. Allow it to simmer for a few minutes until it thickens into a sticky glaze.
- Prepare your rice according to package instructions.
- To serve, place a scoop of rice in a bowl. Slice the chicken and arrange it on top of the rice.
- Add your steamed veggies, drizzle with extra sauce, and garnish with sesame seeds and green onions.
