  • 1/2 cup honey
  • 1/4 cup soy sauce (low sodium works great)
  • 3 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 1 tablespoon sesame oil (optional)
  • 1/2 teaspoon ginger (grated)
  • 1 cup mixed vegetables (like bell peppers, broccoli, or snap peas)
  • Sesame seeds (for garnish)
  • Green onions (for garnish)

Instructions

  • Start by cooking your rice according to the package instructions. This usually takes about 20 minutes.
  • While the rice is cooking, heat olive oil in a large skillet over medium-high heat.
  • Add the chicken pieces to the skillet and cook until they're golden brown, about 6-8 minutes.
  • In a small bowl, mix honey, soy sauce, minced garlic, ginger, and sesame oil to create the sauce.
  • Pour the sauce over the cooked chicken and let it simmer for another 5 minutes until the sauce thickens.
  • Add your mixed veggies to the pan and stir-fry for another 2-3 minutes until they’re tender but still crisp.
  • Serve the chicken and veggies over your cooked rice. Garnish with sesame seeds and chopped green onions.
