- 8 oz fettuccine or your choice of pasta
- 1 lb sirloin steak, cut into strips
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- Salt and pepper, to taste
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp chopped parsley, for garnish
Instructions
- Start by cooking the pasta according to package instructions. Drain and set aside, reserving a little pasta water for later.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the steak strips with salt and pepper, then add them to the skillet. Cook for about 3-4 minutes until browned and cooked to your liking. Remove the steak and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.
- Pour in the heavy cream, stirring to combine. Let it simmer for 2-3 minutes, then add the parmesan cheese. Stir until melted and smooth.
- Add the cooked pasta and steak back to the skillet. Toss everything together, adding reserved pasta water as needed to achieve your desired sauce consistency.
- Season with red pepper flakes, if using, and adjust the salt and pepper to taste. Serve immediately, garnished with chopped parsley.
