Delicious and creamy spinach ricotta lasagna rolls that are perfect for family dinners and meal prep!

  • 12 noodles lasagna
  • 2 cups ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups marinara sauce
  • for garnish fresh basil (optional)

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the lasagna noodles according to package instructions. Drain and lay them flat on a kitchen towel.
  • In a bowl, mix the ricotta, chopped spinach, half the mozzarella, Parmesan, egg, salt, and pepper.
  • Spread about 1/4 cup of marinara sauce on the bottom of a baking dish.
  • Take a lasagna noodle and spread about 2 tablespoons of the ricotta mixture along the length of it. Roll it up tightly and place it seam-side down in the baking dish.
  • Repeat with the remaining noodles and filling.
  • Top with the remaining marinara sauce and sprinkle with the remaining mozzarella cheese.
  • Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  • Let it cool for a few minutes before serving. Garnish with fresh basil if desired.
