- 12 noodles lasagna
- 2 cups ricotta cheese
- 2 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups marinara sauce
- for garnish fresh basil (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions. Drain and lay them flat on a kitchen towel.
- In a bowl, mix the ricotta, chopped spinach, half the mozzarella, Parmesan, egg, salt, and pepper.
- Spread about 1/4 cup of marinara sauce on the bottom of a baking dish.
- Take a lasagna noodle and spread about 2 tablespoons of the ricotta mixture along the length of it. Roll it up tightly and place it seam-side down in the baking dish.
- Repeat with the remaining noodles and filling.
- Top with the remaining marinara sauce and sprinkle with the remaining mozzarella cheese.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving. Garnish with fresh basil if desired.
