  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cups mushrooms, sliced
  • 3 cups fresh spinach, chopped
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese
  • to taste salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano (optional)

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  • Add the sliced mushrooms to the skillet and cook until they are soft and browned, around 5-7 minutes.
  • Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and set aside.
  • In a mixing bowl, whisk together the eggs, milk, garlic powder, oregano, salt, and pepper.
  • In a greased 9×13 inch baking dish, layer the sautéed vegetables evenly. Pour the egg mixture over the vegetables.
  • Sprinkle the shredded cheese on top of the egg mixture.
  • Bake in the preheated oven for 30-35 minutes or until the center is set and the top is lightly golden.
  • Let it cool for a few minutes before slicing and serving.
