- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cups mushrooms, sliced
- 3 cups fresh spinach, chopped
- 6 large eggs
- 1 cup milk
- 1 cup shredded cheese
- to taste salt and pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the sliced mushrooms to the skillet and cook until they are soft and browned, around 5-7 minutes.
- Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and set aside.
- In a mixing bowl, whisk together the eggs, milk, garlic powder, oregano, salt, and pepper.
- In a greased 9×13 inch baking dish, layer the sautéed vegetables evenly. Pour the egg mixture over the vegetables.
- Sprinkle the shredded cheese on top of the egg mixture.
- Bake in the preheated oven for 30-35 minutes or until the center is set and the top is lightly golden.
- Let it cool for a few minutes before slicing and serving.
