- 1 pound ground beef (or turkey for a lighter option)
- 2 cups fresh spinach (chopped (or 1 cup frozen, thawed and drained))
- 1/2 cup breadcrumbs (use gluten-free if needed)
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 1 large egg
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional for a kick)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef, chopped spinach, breadcrumbs, Parmesan cheese, minced garlic, egg, oregano, salt, pepper, and red pepper flakes. Mix everything gently until well combined.
- Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes or until the meatballs are browned and cooked through. You’ll know they’re done when they reach an internal temperature of 160°F (71°C).
- Serve them warm with your favorite dipping sauce, over pasta, or in a sub sandwich!
