  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup milk
  • 1/4 cup onion, finely chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup cherry tomatoes, halved (for garnish, optional)

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
  • Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Fold in the spinach mixture and crumbled feta cheese into the egg mixture.
  • Pour the mixture into a greased baking dish and spread evenly.
  • Bake in the preheated oven for 25-30 minutes or until the eggs are set and the top is lightly golden.
  • Let it cool for a few minutes before slicing. Optionally, garnish with cherry tomatoes.
