- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/2 cup milk
- 1/4 cup onion, finely chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup cherry tomatoes, halved (for garnish, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
- Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Fold in the spinach mixture and crumbled feta cheese into the egg mixture.
- Pour the mixture into a greased baking dish and spread evenly.
- Bake in the preheated oven for 25-30 minutes or until the eggs are set and the top is lightly golden.
- Let it cool for a few minutes before slicing. Optionally, garnish with cherry tomatoes.
