- 1 cup fresh spinach (or 1/2 cup frozen spinach, thawed and drained)
- 1/2 cup feta cheese (crumbled)
- 1/2 cup all-purpose flour (substitute with whole wheat flour for a healthier option)
- 1 large egg
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil spray (for greasing the baking sheet)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the chopped spinach, crumbled feta cheese, flour, Parmesan cheese, garlic powder, salt, and black pepper.
- Crack the egg into the bowl and mix until everything is well combined.
- Scoop out small amounts of the mixture and form them into small patties on the lined baking sheet.
- Lightly spray the tops of the crisps with olive oil spray.
- Bake in the preheated oven for about 15-20 minutes, or until golden brown and crispy.
- Remove from the oven and let them cool for a few minutes before serving.
