- 1 large whole wheat tortilla
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 2 large eggs
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- optional diced tomatoes, bell peppers, or hot sauce
Instructions
- Start by heating a skillet over medium heat. Add the olive oil.
- Crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.
- Pour the eggs into the skillet. Cook for about 2-3 minutes, stirring gently, until they start to set.
- Add the chopped spinach to the eggs and cook for another minute, just until wilted.
- Remove the skillet from heat and stir in the crumbled feta cheese.
- Lay the tortilla flat on a plate. Spoon the spinach and egg mixture onto the center of the tortilla.
- If using, add diced tomatoes or bell peppers on top of the filling.
- Fold the sides of the tortilla in and then roll it up from the bottom to the top, enclosing the filling.
- Optionally, you can return the wrap to the skillet and toast it for 1-2 minutes on each side for a crispy finish.
- Slice in half and enjoy your delicious, homemade breakfast wrap!
