  • 1 large whole wheat tortilla
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 large eggs
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • optional diced tomatoes, bell peppers, or hot sauce

Instructions

  • Start by heating a skillet over medium heat. Add the olive oil.
  • Crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.
  • Pour the eggs into the skillet. Cook for about 2-3 minutes, stirring gently, until they start to set.
  • Add the chopped spinach to the eggs and cook for another minute, just until wilted.
  • Remove the skillet from heat and stir in the crumbled feta cheese.
  • Lay the tortilla flat on a plate. Spoon the spinach and egg mixture onto the center of the tortilla.
  • If using, add diced tomatoes or bell peppers on top of the filling.
  • Fold the sides of the tortilla in and then roll it up from the bottom to the top, enclosing the filling.
  • Optionally, you can return the wrap to the skillet and toast it for 1-2 minutes on each side for a crispy finish.
  • Slice in half and enjoy your delicious, homemade breakfast wrap!
