- 12 oz penne pasta
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 can crushed tomatoes (28 oz)
- 1 cup heavy cream
- 1/2 cup vodka
- 1-2 teaspoons red pepper flakes (adjust to taste)
- Salt and pepper to taste
- Fresh basil for garnish
- Grated Parmesan cheese for serving
Instructions
- Cook the penne pasta according to package instructions in salted water. Reserve about a cup of pasta water before draining.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and red pepper flakes. Sauté for another minute, being careful not to burn the garlic.
- Pour in the crushed tomatoes and vodka. Stir to combine and let it simmer for about 10 minutes.
- Reduce heat to low and stir in the heavy cream. Simmer for an additional 5 minutes, adjusting consistency with reserved pasta water if needed.
- Season with salt and pepper to taste. Toss in the cooked pasta and mix until well coated.
- Serve hot, garnished with fresh basil and Parmesan cheese.
