  • 12 oz penne pasta
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can crushed tomatoes (28 oz)
  • 1 cup heavy cream
  • 1/2 cup vodka
  • 1-2 teaspoons red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Grated Parmesan cheese for serving

Instructions

  • Cook the penne pasta according to package instructions in salted water. Reserve about a cup of pasta water before draining.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and red pepper flakes. Sauté for another minute, being careful not to burn the garlic.
  • Pour in the crushed tomatoes and vodka. Stir to combine and let it simmer for about 10 minutes.
  • Reduce heat to low and stir in the heavy cream. Simmer for an additional 5 minutes, adjusting consistency with reserved pasta water if needed.
  • Season with salt and pepper to taste. Toss in the cooked pasta and mix until well coated.
  • Serve hot, garnished with fresh basil and Parmesan cheese.
