  • 3 tablespoons Sriracha sauce (adjust for spice level)
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1 inch ginger (grated)
  • 2 cups cooked rice (white or brown)
  • 1 cup mixed vegetables (like bell peppers, carrots, and broccoli)
  • Sesame seeds (for garnish)
  • Green onions (chopped, for garnish)

Instructions

  • Start by heating the olive oil in a large skillet over medium heat.
  • Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  • Next, toss in the shrimp and cook for 2-3 minutes, until they turn pink and opaque.
  • In a small bowl, mix together the Sriracha, honey, and soy sauce.
  • Pour the sauce over the shrimp and stir well to combine. Cook for another 2 minutes, allowing the sauce to thicken slightly.
  • In the meantime, heat your mixed vegetables in another pan or microwave until they are warmed through.
  • To serve, place the cooked rice in bowls, top with the shrimp and vegetables, and garnish with sesame seeds and green onions.
