  • 8 oz lobster meat (cooked and chopped)
  • 8 oz stir-fry noodles (like egg noodles or rice noodles)
  • 2 tablespoons vegetable oil
  • 1 bell pepper (sliced)
  • 1 cup snap peas
  • 2 green onions (chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon ginger (minced)
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste (adjust to taste)
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • to taste salt and pepper

Instructions

  • Start by cooking the stir-fry noodles according to the package instructions. Drain and set aside.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the garlic and ginger, stirring for about 30 seconds until fragrant.
  • Next, toss in the sliced bell pepper and snap peas. Stir-fry for about 3-4 minutes until they start to soften.
  • Now, add the lobster meat to the skillet. Stir gently to combine.
  • In a small bowl, mix together the soy sauce, chili paste, oyster sauce, and sesame oil. Pour this sauce over the lobster and vegetables.
  • Add the cooked noodles to the skillet, tossing everything together to coat the noodles well with the sauce. Cook for another 2-3 minutes.
  • Finally, sprinkle in the green onions, and season with salt and pepper to taste. Serve hot!
