- 1 pound ground beef
- 8 ounces pasta (your choice, such as penne)
- 1 cup beef broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1-2 pieces chipotle peppers in adobo sauce, finely chopped (to taste)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper, to taste
- 1 tablespoon olive oil
- Optional: fresh cilantro and lime for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
- Once the beef is browned, stir in the diced tomatoes, beef broth, chipotle peppers, cumin, salt, and pepper. Bring to a simmer.
- Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside.
- Once the sauce is simmering, add the cooked pasta to the skillet. Stir well to combine everything.
- Let it cook for an additional 2-3 minutes, allowing the pasta to absorb some of the sauce.
- Garnish with fresh cilantro and a squeeze of lime if desired. Serve hot!
