  • 1 pound ground beef
  • 8 ounces pasta (your choice, such as penne)
  • 1 cup beef broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1-2 pieces chipotle peppers in adobo sauce, finely chopped (to taste)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Optional: fresh cilantro and lime for garnish

Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
  • Once the beef is browned, stir in the diced tomatoes, beef broth, chipotle peppers, cumin, salt, and pepper. Bring to a simmer.
  • Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside.
  • Once the sauce is simmering, add the cooked pasta to the skillet. Stir well to combine everything.
  • Let it cook for an additional 2-3 minutes, allowing the pasta to absorb some of the sauce.
  • Garnish with fresh cilantro and a squeeze of lime if desired. Serve hot!
