- 1 pound shrimp (peeled and deveined)
- 1 tablespoon Cajun seasoning (adjust to taste)
- 1 tablespoon olive oil
- 4 large flour tortillas
- 2 cups shredded cheese (Monterey Jack or Cheddar)
- 1/2 cup diced bell peppers (optional)
- 1/4 cup chopped green onions
- Sour cream (for serving)
- Chopped cilantro (for garnish)
Instructions
- Start by seasoning your shrimp with Cajun seasoning. Make sure every shrimp is coated well for maximum flavor.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque.
- Remove the shrimp from the skillet and set aside. In the same skillet, place one tortilla and sprinkle half of the cheese on one half of the tortilla.
- Add half of the cooked shrimp, bell peppers, and green onions on top of the cheese. Fold the tortilla over to create a half-moon shape.
- Cook for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining ingredients.
- Slice the quesadillas into wedges and serve with sour cream and a sprinkle of cilantro on top.
