Ingredients

  • 1 can (14 oz) coconut milk
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1-2 tablespoons chili powder (adjust to taste)
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • Fresh cilantro for garnish
  • Juice of 1 lime

Instructions

  1. Marinate chicken with chili powder, cumin, salt, and pepper; let sit for 15 minutes.
  2. Sauté onion in olive oil until translucent, then add garlic and ginger.
  3. Add marinated chicken to the skillet; cook until browned, about 5-7 minutes per side.
  4. Pour in coconut milk, bring to a simmer, and cook for 20 minutes until chicken is tender.
  5. Stir in lime juice, garnish with cilantro, and serve with rice or salad.
