  • 2 cups sweet corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instructions. Drain and rinse under cold water to stop cooking.
  • In a large bowl, combine the corn, red bell pepper, avocado, red onion, and cilantro.
  • In a smaller bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
