- 8 ounces pasta (like rotini or penne)
- 2 cups sweet corn (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup crumbled feta cheese (optional)
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water to stop cooking.
- In a large bowl, combine the corn, red bell pepper, avocado, red onion, and cilantro.
- In a smaller bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Add the cooked pasta to the vegetable mixture and pour the dressing on top.
- Stir everything gently to combine.
- Sprinkle crumbled feta cheese on top before serving.
