  • 1 pound ground turkey
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 box (8.5 ounces) cornbread mix
  • 1/3 cup milk
  • 1 large egg
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brown the ground turkey in a large skillet over medium heat for 5-7 minutes.
  3. Add black beans, corn, salsa, chili powder, and cumin to the skillet and simmer for 5 minutes.
  4. In a separate bowl, mix cornbread mix, milk, and egg until just combined.
  5. Pour the turkey mixture into a greased 9×13-inch baking dish and cover with cornbread batter.
  6. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
