Gather these simple ingredients for your Southwest Ground Turkey Cornbread Bake:
- 1 pound ground turkey
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 box (8.5 ounces) cornbread mix
- 1/3 cup milk
- 1 large egg
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Brown the ground turkey in a large skillet over medium heat for 5-7 minutes.
- Add black beans, corn, salsa, chili powder, and cumin to the skillet and simmer for 5 minutes.
- In a separate bowl, mix cornbread mix, milk, and egg until just combined.
- Pour the turkey mixture into a greased 9×13-inch baking dish and cover with cornbread batter.
- Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
- Sprinkle cheese on top and bake for an additional 5 minutes until melted. Garnish with cilantro if desired.
