- 1 pie crust pie crust (store-bought or homemade)
- 4-5 medium ripe tomatoes, sliced
- 1 cup mayonnaise
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1/4 cup chopped fresh basil (or your favorite herb)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 tablespoon olive oil (optional, for drizzling)
Instructions
- Preheat your oven to 375°F (190°C).
- If using a homemade crust, roll it out and fit it into a 9-inch pie dish. Prick the bottom with a fork and pre-bake for 10 minutes.
- While the crust is baking, slice the tomatoes and sprinkle them with salt. Let them sit for about 10 minutes to drain excess moisture.
- In a mixing bowl, combine the mayonnaise, shredded cheese, basil, black pepper, and garlic powder. Stir until well combined.
- Once the crust is slightly cooled, layer the drained tomato slices in the bottom. Then spread the cheese mixture evenly over the top.
- Drizzle with olive oil if desired, and bake for 30-35 minutes until the top is golden and bubbly.
- Let it cool for a few minutes before slicing. Serve warm or at room temperature.
