Delicious Southern Breakfast Enchiladas filled with sausage and eggs, topped with a creamy gravy.

Ingredients

  • 8 large flour tortillas
  • 6 large eggs
  • 1 cup shredded cheese (cheddar works best)
  • 1 pound breakfast sausage
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Cook the sausage in a skillet over medium heat until browned and crumbled.
  2. Whisk eggs in a bowl, then add to the skillet with the sausage, cooking until set. Season with salt and pepper.
  3. Spoon the sausage and egg mixture onto each tortilla, sprinkle with cheese, roll up tightly, and place seam-side down in a greased baking dish.
  4. Make the gravy by whisking flour into the sausage drippings, then gradually adding milk until thickened. Season with garlic powder, onion powder, salt, and pepper.
  5. Preheat oven to 350°F (175°C). Pour gravy over enchiladas, sprinkle with remaining cheese, and bake for 20-25 minutes until bubbly and golden.
