- 8 large flour tortillas
- 6 large eggs
- 1 cup shredded cheese (cheddar works best)
- 1 pound breakfast sausage
- 1 cup milk
- 1/4 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Cook the sausage in a skillet over medium heat until browned and crumbled.
- Whisk eggs in a bowl, then add to the skillet with the sausage, cooking until set. Season with salt and pepper.
- Spoon the sausage and egg mixture onto each tortilla, sprinkle with cheese, roll up tightly, and place seam-side down in a greased baking dish.
- Make the gravy by whisking flour into the sausage drippings, then gradually adding milk until thickened. Season with garlic powder, onion powder, salt, and pepper.
- Preheat oven to 350°F (175°C). Pour gravy over enchiladas, sprinkle with remaining cheese, and bake for 20-25 minutes until bubbly and golden.
