  • 12 oz penne pasta
  • 1 lb smoked sausage, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium bell pepper, sliced
  • 1 can diced tomatoes, undrained
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes (optional)
  • to taste Salt and pepper
  • 1/2 cup heavy cream
  • for garnish Fresh parsley

Instructions

  • Cook the penne pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.
  • In a large skillet over medium heat, add the sliced sausage. Sauté until browned, about 5-7 minutes.
  • Add the diced onion and sliced bell pepper to the skillet. Cook until the onion becomes translucent, about 3-4 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the can of diced tomatoes, smoked paprika, dried oregano, and crushed red pepper flakes. Season with salt and pepper. Let this simmer for about 5 minutes.
  • Pour in the heavy cream and stir well to combine. Allow it to heat through, about 2 minutes.
  • Toss in the cooked penne pasta, mixing everything until well coated. Cook for another minute to heat the pasta through.
  • Garnish with fresh parsley and serve immediately.
