- 12 oz penne pasta
- 1 lb smoked sausage, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 medium bell pepper, sliced
- 1 can diced tomatoes, undrained
- 2 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp crushed red pepper flakes (optional)
- to taste Salt and pepper
- 1/2 cup heavy cream
- for garnish Fresh parsley
Instructions
- Cook the penne pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.
- In a large skillet over medium heat, add the sliced sausage. Sauté until browned, about 5-7 minutes.
- Add the diced onion and sliced bell pepper to the skillet. Cook until the onion becomes translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the can of diced tomatoes, smoked paprika, dried oregano, and crushed red pepper flakes. Season with salt and pepper. Let this simmer for about 5 minutes.
- Pour in the heavy cream and stir well to combine. Allow it to heat through, about 2 minutes.
- Toss in the cooked penne pasta, mixing everything until well coated. Cook for another minute to heat the pasta through.
- Garnish with fresh parsley and serve immediately.
