- 1 pound smoked sausage (sliced)
- 4 medium potatoes (diced)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 4 cups chicken broth
- 1 cup heavy cream (substitute with coconut milk for dairy-free option)
- 1 cup frozen corn
- 1 teaspoon dried thyme
- Salt (to taste)
- Pepper (to taste)
- Fresh parsley (for garnish, optional)
Instructions
- In your slow cooker, add the sliced sausage, diced potatoes, chopped onion, and minced garlic.
- Pour in the chicken broth and stir everything together to combine.
- Sprinkle in the dried thyme, and season with salt and pepper based on your taste.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
- About 30 minutes before serving, stir in the heavy cream and frozen corn.
- Once everything is heated through, taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.
