  • 4 medium potatoes (diced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 cup heavy cream (substitute with coconut milk for dairy-free option)
  • 1 cup frozen corn
  • 1 teaspoon dried thyme
  • Salt (to taste)
  • Pepper (to taste)
  • Fresh parsley (for garnish, optional)

Instructions

  • In your slow cooker, add the sliced sausage, diced potatoes, chopped onion, and minced garlic.
  • Pour in the chicken broth and stir everything together to combine.
  • Sprinkle in the dried thyme, and season with salt and pepper based on your taste.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  • About 30 minutes before serving, stir in the heavy cream and frozen corn.
  • Once everything is heated through, taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.
