- 2 pounds boneless, skinless chicken breasts
- 1 packet ranch seasoning mix
- 1 cup chicken broth
- 1 cup cream of chicken soup
- 8 ounces cream cheese
- 1 cup shredded cheddar cheese
- 12 ounces pasta (penne or rotini work best)
- Salt and pepper (to taste)
- Fresh parsley (for garnish (optional))
Instructions
- Place the chicken breasts in the slow cooker.
- Sprinkle the ranch seasoning mix evenly over the chicken.
- Pour the chicken broth and cream of chicken soup over the top.
- Add the cream cheese on top of the mixture.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and tender.
- Once the chicken is cooked, shred it using two forks.
- Stir in the shredded cheddar cheese until melted and mixed in.
- In a separate pot, cook the pasta according to package instructions. Drain and add to the slow cooker.
- Mix everything together until well combined. Adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with fresh parsley if desired.
