- 2 pounds boneless, skinless chicken thighs or breasts
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 cup potatoes, diced
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup unsalted butter
- 1 tablespoon dried thyme
- 1 tablespoon dried parsley
- Salt and pepper to taste
Instructions
- Begin by seasoning the chicken with salt, pepper, and thyme.
- In your slow cooker, layer the sliced carrots, chopped celery, and diced potatoes.
- Place the seasoned chicken on top of the veggies.
- Sprinkle the minced garlic over the chicken.
- Pour the chicken broth over everything.
- Cut the butter into small pieces and scatter them over the top.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- Once done, shred the chicken with two forks and stir everything together.
- Serve hot and enjoy!
