  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 cup potatoes, diced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup unsalted butter
  • 1 tablespoon dried thyme
  • 1 tablespoon dried parsley
  • Salt and pepper to taste

Instructions

  • Begin by seasoning the chicken with salt, pepper, and thyme.
  • In your slow cooker, layer the sliced carrots, chopped celery, and diced potatoes.
  • Place the seasoned chicken on top of the veggies.
  • Sprinkle the minced garlic over the chicken.
  • Pour the chicken broth over everything.
  • Cut the butter into small pieces and scatter them over the top.
  • Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  • Once done, shred the chicken with two forks and stir everything together.
