- 2 pounds beef chuck roast (cut into 1-inch cubes)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 8 ounces mushrooms (sliced)
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- Salt and pepper (to taste)
- 1 cup sour cream (for creamy finish)
- 2 tablespoons cornstarch (optional for thickening)
- Fresh parsley (for garnish)
Instructions
- Season the beef cubes with salt and pepper.
- In a large skillet over medium-high heat, brown the beef cubes on all sides.
- Transfer the beef to the slow cooker and add the onions, garlic, and mushrooms.
- Pour in the beef broth, Worcestershire sauce, and sprinkle with paprika.
- Cover and cook on low for 7-8 hours or high for 4-5 hours.
- About 30 minutes before serving, stir in the sour cream and optional cornstarch.
- Garnish with fresh parsley before serving.
