Ingredients

- 3 to 4 pounds of chuck roast
- 1 tablespoon olive oil
- 2 cups beef broth
- 1 packet taco seasoning
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 lime, juiced
- Salt and pepper to taste
- Taco shells or tortillas
- Your favorite toppings (lettuce, cheese, salsa, etc.)
Instructions
- Heat olive oil in a skillet and sear the chuck roast for 4-5 minutes on each side.
- Transfer the roast to a slow cooker and add onion, garlic, beef broth, and taco seasoning.
- Cover and cook on low for 8 hours or high for 4 hours until fork-tender.
- Remove the roast, let it cool, and shred with two forks.
- Assemble tacos with shredded meat, toppings, and lime juice.

- For best flavor, let the meat cook longer on low.
