- 4 lbs beef short ribs
- 1 lb organic mushrooms (button or cremini work well)
- 2 cups beef broth
- 1 cup red wine (optional but recommended)
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
- 2 teaspoons rosemary (fresh or dried)
- Salt and pepper to taste
Instructions
- Gather and prepare all ingredients.
- Heat olive oil in a pot, season short ribs, and brown them on all sides.
- Remove ribs and sauté onions and garlic in the same pot until translucent, then add mushrooms and cook for 5 minutes.
- Stir in tomato paste, add red wine, simmer, then add beef broth, thyme, and rosemary.
- Return short ribs to the pot, ensuring they are submerged, and bring to a gentle boil.
- Cover and simmer on low for 3 to 4 hours until meat is fork-tender.
Notes
- For deeper flavor, let the dish cool and refrigerate overnight, then reheat to serve.
