Instructions
- Start by slicing the cucumbers in half lengthwise. Scoop out the seeds to create a boat shape.
- Next, mash the ripe avocado in a bowl and mix in the mayonnaise, soy sauce, and sriracha if you're using it.
- Fill each cucumber half with the avocado mixture.
- Top with the cooked shrimp, arranging them nicely over the avocado.
- Garnish with sesame seeds and chopped green onions.
- Serve immediately with pickled ginger and wasabi on the side.
