Instructions

  • Start by slicing the cucumbers in half lengthwise. Scoop out the seeds to create a boat shape.
  • Next, mash the ripe avocado in a bowl and mix in the mayonnaise, soy sauce, and sriracha if you're using it.
  • Fill each cucumber half with the avocado mixture.
  • Top with the cooked shrimp, arranging them nicely over the avocado.
  • Garnish with sesame seeds and chopped green onions.
