- 1 pound fresh shrimp (peeled and deveined)
- 1/2 cup red onion (finely chopped)
- 1 jalapeño seeded and minced
- 1/2 cup fresh cilantro (chopped)
- 1/4 cup lime juice (about 2–3 limes)
- 1 avocado diced
- Salt and pepper (to taste)
- 1/2 cup diced cucumber (optional)
- 1/4 cup diced tomatoes (optional)
- Small tortilla chips or cucumber slices (for serving)
Instructions
- Start by preparing the shrimp. If using raw shrimp, boil them in salted water for 2-3 minutes until they turn pink and opaque. Drain and let them cool.
- In a large bowl, combine the cooled shrimp, red onion, jalapeño, cilantro, and lime juice. Mix well and season with salt and pepper.
- Let the mixture marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Just before serving, gently fold in the diced avocado. Be careful not to mash it completely.
- To serve, scoop the ceviche into small cups or on tortilla chips. Garnish with diced cucumber and tomatoes if desired.
