Ingredients

  • 1 pound of large shrimp, peeled and deveined
  • 2 cups of fresh pineapple, cut into chunks
  • 2 tablespoons of olive oil
  • 2 tablespoons of soy sauce
  • 1 tablespoon of honey
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground ginger
  • Salt and pepper, to taste
  • Wooden or metal skewers

Instructions

  1. Gather ingredients and soak wooden skewers in water if using.
  2. Mix olive oil, soy sauce, honey, garlic, ginger, salt, and pepper in a bowl to create the marinade.
  3. Marinate shrimp in the marinade for at least 15 minutes.
  4. Cut pineapple into chunks about 1 to 2 inches in size.
  5. Assemble skewers by alternating shrimp and pineapple chunks.
  6. Preheat grill to medium-high heat (about 400°F or 200°C).
  7. Grill skewers for 2-3 minutes on each side until shrimp are pink and opaque.
  8. Serve warm, optionally garnished with fresh herbs.
