- 1 lb ground beef (or lamb)
- 1 medium onion, diced
- 2 medium carrots, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups diced potatoes
- 1 cup frozen peas
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and carrots, cooking until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the ground beef, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- Pour in the beef broth and add the diced potatoes, Worcestershire sauce, and thyme. Bring to a boil.
- Reduce heat and let it simmer for about 15 minutes, or until the potatoes are tender.
- Stir in the frozen peas and season with salt and pepper to taste. Cook for an additional 5 minutes.
- Serve hot, garnished with fresh parsley if desired.
