  • 1 lb ground beef (or lamb)
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups diced potatoes
  • 1 cup frozen peas
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and carrots, cooking until softened, about 5 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the ground beef, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  • Pour in the beef broth and add the diced potatoes, Worcestershire sauce, and thyme. Bring to a boil.
  • Reduce heat and let it simmer for about 15 minutes, or until the potatoes are tender.
  • Stir in the frozen peas and season with salt and pepper to taste. Cook for an additional 5 minutes.
  • Serve hot, garnished with fresh parsley if desired.
