Gather these fresh ingredients for your SHEET PAN SHRIMP BOIL:

  • 1 pound large shrimp, peeled and deveined
  • 1 pound baby potatoes, halved
  • 2 ears of corn, cut into thirds
  • 1 red bell pepper, chopped
  • 1 lemon, sliced
  • 4 cloves garlic, minced
  • 4 tablespoons olive oil
  • 2 tablespoons Old Bay seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix the potatoes, corn, bell pepper, and garlic with olive oil, Old Bay seasoning, salt, and pepper.
  3. Spread the vegetable mixture on a large sheet pan.
  4. Roast the vegetables in the oven for 15 minutes.
