  • 1 pound smoked sausage (like kielbasa or Italian sausage)
  • 2 cups broccoli florets
  • 1 piece bell pepper, sliced
  • 1 medium onion, cut into wedges
  • 2 medium carrots, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • to taste fresh parsley for garnish (optional)

Instructions

  • Preheat your oven to 400°F (200°C).
  • On a large sheet pan, combine the sausage, broccoli, bell pepper, onion, and carrots.
  • Drizzle olive oil over the ingredients, then sprinkle garlic powder, paprika, salt, and pepper. Toss everything together until well coated.
  • Spread the mixture out in a single layer on the sheet pan.
  • Bake for 25-30 minutes, stirring halfway through, until the vegetables are tender and the sausage is browned.
  • Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired.
