- 2 medium zucchinis (sliced)
- 8 oz mushrooms (sliced)
- 1 medium onion (sliced)
- 2 tablespoons olive oil
- 1 teaspoon garlic (minced (optional))
- to taste Salt
- to taste Pepper
- to taste Fresh herbs (like parsley or basil for garnish (optional))
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced onions and sauté for about 2-3 minutes until they start to soften.
- Stir in the sliced mushrooms and cook for another 3-4 minutes, until they release their moisture.
- Add the sliced zucchini and garlic (if using), and season with salt and pepper.
- Sauté everything together for about 5-7 minutes, until the zucchini is tender but still slightly crisp.
- Remove from heat and garnish with fresh herbs if desired. Serve immediately!
