- 2 medium zucchini (sliced)
- 1 cup mushrooms (sliced, cremini preferred)
- 1 medium onion (thinly sliced)
- 3 tablespoons olive oil
- 2 cloves garlic (minced)
- Salt and pepper (to taste)
- Fresh parsley (for garnish (optional))
Instructions
- Heat the olive oil in a large skillet over medium heat. You want the oil to shimmer but not smoke.
- Add the sliced onions and cook for about 3-4 minutes until they become translucent.
- Stir in the minced garlic and cook for another minute, allowing the garlic to become fragrant.
- Add the sliced mushrooms to the pan and cook for 5-6 minutes, stirring occasionally. They should start to brown.
- Now, add the zucchini slices to the skillet. Season everything with salt and pepper.
- Sauté for an additional 5-7 minutes until the zucchini is tender yet still has a slight crunch.
- Remove from heat and garnish with fresh parsley if desired. Serve hot!
