  • 2 medium zucchini (sliced)
  • 1 cup mushrooms (sliced, cremini preferred)
  • 1 medium onion (thinly sliced)
  • 3 tablespoons olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish (optional))

Instructions

  • Heat the olive oil in a large skillet over medium heat. You want the oil to shimmer but not smoke.
  • Add the sliced onions and cook for about 3-4 minutes until they become translucent.
  • Stir in the minced garlic and cook for another minute, allowing the garlic to become fragrant.
  • Add the sliced mushrooms to the pan and cook for 5-6 minutes, stirring occasionally. They should start to brown.
  • Now, add the zucchini slices to the skillet. Season everything with salt and pepper.
  • Sauté for an additional 5-7 minutes until the zucchini is tender yet still has a slight crunch.
  • Remove from heat and garnish with fresh parsley if desired. Serve hot!
