  • 8 slices of bread (white or whole wheat)
  • 4 breakfast sausage links
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • Butter, for frying
  • Maple syrup, for serving

Instructions

  1. Cook the sausage links in a skillet over medium heat until browned and fully cooked; set aside to cool.
  2. Flatten each slice of bread using a rolling pin to about 1/4 inch thickness.
  3. Place a sausage link at one end of each slice of bread and roll it up tightly, sealing the edges.
  4. Whisk together the eggs, milk, vanilla extract, and cinnamon in a bowl.
  5. Dip each roll-up in the egg mixture, letting the excess drip off.
  6. Melt butter in a skillet over medium heat and fry the roll-ups seam side down until golden brown, about 3-4 minutes on each side.
  7. Mix sugar and cinnamon in a bowl and roll the warm roll-ups in the mixture.
  8. Serve with maple syrup and enjoy!
