- 8 slices of bread (white or whole wheat)
- 4 breakfast sausage links
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 cup sugar
- Butter, for frying
- Maple syrup, for serving
Instructions
- Cook the sausage links in a skillet over medium heat until browned and fully cooked; set aside to cool.
- Flatten each slice of bread using a rolling pin to about 1/4 inch thickness.
- Place a sausage link at one end of each slice of bread and roll it up tightly, sealing the edges.
- Whisk together the eggs, milk, vanilla extract, and cinnamon in a bowl.
- Dip each roll-up in the egg mixture, letting the excess drip off.
- Melt butter in a skillet over medium heat and fry the roll-ups seam side down until golden brown, about 3-4 minutes on each side.
- Mix sugar and cinnamon in a bowl and roll the warm roll-ups in the mixture.
- Serve with maple syrup and enjoy!
