- 8 slices bread (white or whole wheat)
- 4 links breakfast sausages
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 2 tablespoons butter (for frying)
- Maple syrup (for serving)
- Powdered sugar (for dusting (optional))
Instructions
- Cook the breakfast sausages according to the package instructions until golden brown. Let them cool slightly, then slice each sausage link in half.
- In a bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
- Take a slice of bread and gently flatten it with a rolling pin or your hands.
- Place half of a sausage on one end of the flattened bread, then roll it tightly, starting from the sausage end.
- Repeat with the remaining bread and sausage halves.
- In a skillet over medium heat, melt the butter. Add the roll-ups seam side down and cook until golden brown on all sides, about 2-3 minutes per side.
- Once cooked, remove from the skillet and let them drain on a paper towel.
- Serve warm with maple syrup drizzled on top and powdered sugar if desired.
