  • 8 slices bread (white or whole wheat)
  • 4 links breakfast sausages
  • 3 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 tablespoons butter (for frying)
  • Maple syrup (for serving)
  • Powdered sugar (for dusting (optional))

Instructions

  • Cook the breakfast sausages according to the package instructions until golden brown. Let them cool slightly, then slice each sausage link in half.
  • In a bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  • Take a slice of bread and gently flatten it with a rolling pin or your hands.
  • Place half of a sausage on one end of the flattened bread, then roll it tightly, starting from the sausage end.
  • Repeat with the remaining bread and sausage halves.
  • In a skillet over medium heat, melt the butter. Add the roll-ups seam side down and cook until golden brown on all sides, about 2-3 minutes per side.
  • Once cooked, remove from the skillet and let them drain on a paper towel.
  • Serve warm with maple syrup drizzled on top and powdered sugar if desired.
