  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup toffee bits
  • Sea salt (for sprinkling)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the toffee bits.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, leaving enough space between them.
  • Bake for 10-12 minutes or until the edges are golden.
  • Remove from the oven and immediately sprinkle a little sea salt on top of each cookie.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
