- 1 cup unsalted butter (softened)
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips (semi-sweet or dark)
- 1 cup shelled pistachios (chopped)
- Flaky sea salt (for sprinkling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add in the egg and vanilla extract. Mix until fully combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips and chopped pistachios until evenly distributed.
- Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Sprinkle a little flaky sea salt on top of each cookie dough ball.
- Bake for 10-12 minutes or until the edges are golden and the center is still soft. They will continue to bake on the sheet after removing from the oven.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
