Salted Honey Pistachio Blondie Bars

  • 1 cup unsalted butter (melted)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shelled pistachios (chopped)
  • 1/2 cup honey
  • Flaky sea salt (for topping)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  • In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined.
  • Add the eggs and vanilla extract, mixing until smooth.
  • In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  • Fold in the chopped pistachios gently.
  • Spread the batter evenly in the prepared baking pan.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  • While the blondies are baking, warm the honey slightly until it’s pourable.
  • Once the blondies are out of the oven, drizzle them with honey and sprinkle flaky sea salt on top.
  • Allow to cool completely in the pan before slicing into squares.
