  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 1/4 cup granulated sugar (for sprinkling)

Instructions

  • Preheat your oven to 350°F (175°C). Prepare a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Add honey, egg, and vanilla extract to the mixture. Beat until well combined.
  • In another bowl, whisk together the flour, baking soda, cinnamon, and sea salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheet.
  • Sprinkle a little granulated sugar on top of each cookie before baking.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
