Ingredients
Scale
- 1 large ripe pineapple (peeled, cored, and cut into rings)
- 1 cup dark rum
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold sparkling water (or beer for extra flavor)
- Vegetable oil (for frying)
- Powdered sugar (for dusting (optional))
- Fresh mint leaves (for garnish (optional))
Instructions
- Start by soaking the pineapple rings in rum. Place them in a bowl and let them soak for at least 30 minutes.
- In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.
- Add the cold sparkling water or beer gradually to the dry ingredients, stirring until you achieve a smooth batter.
- Heat vegetable oil in a deep frying pan over medium heat. You want enough oil to submerge the pineapple rings.
- Once the oil is hot (about 350°F), dip each rum-soaked pineapple ring into the batter, allowing any excess to drip off.
- Carefully place the battered pineapple rings in the hot oil, frying them for about 3-4 minutes on each side until golden brown.
- Remove the fried pineapple from the oil and let them drain on paper towels.
- If desired, dust with powdered sugar and garnish with fresh mint leaves before serving.
