  • 1/2 cup cold sparkling water (or beer for extra flavor)
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting (optional))
  • Fresh mint leaves (for garnish (optional))

Instructions

  • Start by soaking the pineapple rings in rum. Place them in a bowl and let them soak for at least 30 minutes.
  • In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.
  • Add the cold sparkling water or beer gradually to the dry ingredients, stirring until you achieve a smooth batter.
  • Heat vegetable oil in a deep frying pan over medium heat. You want enough oil to submerge the pineapple rings.
  • Once the oil is hot (about 350°F), dip each rum-soaked pineapple ring into the batter, allowing any excess to drip off.
  • Carefully place the battered pineapple rings in the hot oil, frying them for about 3-4 minutes on each side until golden brown.
  • Remove the fried pineapple from the oil and let them drain on paper towels.
  • If desired, dust with powdered sugar and garnish with fresh mint leaves before serving.
